But for a while, I really enjoyed that crazy, brutal lifestyle of non-stop grinding to be the best. I thought for a while that was going to be my career path - owning one of the World’s 50 Best Restaurants, and being one of the best chefs. I was able to work in different cities and states around the country in some really incredible establishments. The majority of my career so far has been on the fine dining side, not even pasta related. What are some of your favorite cooking adventures prior to your pasta making around town? My mom likes to show off this photo she has of me drawing pictures of chefs in second grade. I don’t have that moment where I remember standing in the kitchen on the counter with my grandma or something. I’ve been cooking professionally for about 10 years now. How long have you been cooking? Due to its super fun size, it is popular amongst kids. Pastina is a super tiny pasta frequently used in Italian and Turkish soups. It of used in baked dishes as a pasta base or in salads. They are usually added to soups and broths, such as Italian Wedding Soup.ĭitalini resembles tiny thimble shapes. Tiny pastas are usually added to soups or used as a “base” to different dishes.Īcini de Pepe resemble tiny peppercorns. You can pair spaghetti with just about any sauce. Spaghetti is one of the most popular pasta styles in America due to its versatility. It literally translates to “little worms”, You will find this pasta style in many stir-fry dishes. Vermicelli is thicker than angel hair but thinner than spaghetti. Angel hair pairs great with light sauces or olive oil. Due to the thinness of this pasta, extra meaty sauces can easily be overpowering. It is usually added to soups.Īngel Hair Pasta resembles thinner strands of spaghetti. Skinny pastas pair perfectly with light sauces and vegetables.įideo, one of the most fragile types of pastas, are short and very thin. It is often mixed with Alfredo sauce to create the ultra-popular Italian dish Fettuccine Alfredo. It is popular in colder months and pairs great with thick meaty sauces.įettuccine is a thick ribbon shaped pasta that is often cooked al-dente. It can be used in baking or stove-top preparations. Lasagne are thick sheets of pasta that are typically used in baking to make lasagna dishes perfect to be layered with thick cheese.
